Topic: How to write a film step outline

i need to do one for my class, i needs to be something related in latino/hispanic culture, mexico, border, or anything on that line..i never done a documentary or a film before, so i need tips and things to look out for, etc from you guys. anything would really help
so heres some of my ideas for a topic:
1. "im crossing the border" -its like mtv's true life. a documentary about two people, one is going to the US from Mexico, and one is from Mexico and is going to the US.
2. life of a illegal immigrant in the US (thinking of doint it with 2-3 diffrent ethnicity) -probably 2-3 group/person/family who are illigals and see how they cope with under the table jobs, etc.
3. "crossing the border"---this time someone trying to cross the border illegally ( im not sure if can do this one legally and hardness wise ) (i wanna be realistic )...i dont wanna go to jail if we get caught haha
4. common stereotyoes among latino/hispanics
5. latino/hispanic food
6. interracial dating

Documentaries are somewhat difficult to do unless you really do a detailed outline of exactly what you want to come across to your audience. Step by step just alike a well written story you want a video to explain the feelings and emotions while the well chosen words tell the story.
I really like the first one best. It will show the real differences between being an American citizen going into Mexico vs a Mexican citizen going into the US.
You really have your work cut out for you. Best wishes.
You have a lot of good ideas, I like #2 and #4 the best. 2 would be good if you could find some families to interview. If you can't find a family to document, then go with #4 because you can interview legal and illegal immigrants individually.
people need to understand that there is a HUGE difference from a Hispanic or Latino person and an illegal immigrant from Mexico.
